Dirt Cups are the ultimate nostalgia! They were the treat that we all loved to find when we came home from school but the traditional dirt cup topping of oreos are not kosher for Passover!
I added chocolate covered matzo to the top along with the traditional Passover fruit gel slices and VOILA! The Passover dirt cup was born!
Pudding
⅓ Cup kosher for Passover Cocoa powder
⅓ Cup granulated sugar
1 ½ Cups milk (or plant based milk alternative)
5 Egg Yolks
2 Tablespoons postato starch
Toppings
Gel fruit slices
Chocolate covered matzo
Place the cocoa powder and milk in a pot. Heat over medium low heat until bubbles start to form along the edges of the pot. Pour in the sugar, whisk, and remove from the heat.
While heating the milk, whisk together the egg yolks and potato starch in a separate bowl. Whisk until pale yellow and creamy.
Once the milk mixture is heated, pour VERY SLOWLY into the egg mixture while whisking the whole time! This is a very important step. If you do not add slowly enough and do not constantly whisk, the eggs will scramble.
Continue whisking until there are no lumps. Pour back into the pot and cook over medium heat, stirring constantly until the mixture thickens to a pudding consistency.
Spoon the pudding into plastic cups and place in the fridge to chill for at least 2 hours. While the pudding is chilling, cut the fruit gel slices into worm shapes.
When you are ready to assemble the dirt cups, take the pudding cups out of the refrigerator. Top with crushed chocolate matzo and fruit gel slice "worms".
