Passover desserts are not the best. You can only eat so many jelly fruit slices and coconut macaroons! These cookies are not only kosher for passover, they are gluten free, dairy free and have (almost) no added sugar. This basically makes them a salad! These are chocolate chip cookies made with almond flour and coconut oil.
2 Tablespoons coconut oil
4 Tablespoons maple syrup
1 Egg
1 Teaspoon vanilla extract
½ Teaspoon baking soda
2 Cups almond flour
Dash of kosher salt
¾ Cup kosher for passover non-dairy (parve) chocolate chips
Preheat the oven to 375 degrees.
In a large bowl, whisk together the coconut oil and maple syrup. Once fully combined, beat in the egg and vanilla extract.
Add the flour, baking soda, and salt to the mixture and mix with a spatula until almost combined. Add in the chocolate chips and finish mixing.
Using a tablespoon, place the cookies on a parchment paper lined baking sheet about 1 inch apart.
Bake for 8-10 minutes. Let cool on a wire rack and enjoy!
