Chicken soup brings comfort to everyone. No matter how horrible you feel, physical or mental, chicken soup brightens your day! This is "souper" easy to make. You fill the pot and just let it go. A few hours later you have yummy chicken soup!
1 Whole chicken (have them remove the bag of innards at the grocery store)
3 Large carrots
1 Head of celery
1 Onion
3 Sprigs of rosemary
5 Sprigs of dill
Place the chicken in a large dutch oven or soup pot. Cut the onion, carrots, and celery into large chunks and place in the pot around the chicken.
Tie the herbs in a cheesecloth and place in the pot. Fill with water until it covers the chicken.
Bring to a boil and reduce to simmer. Let simmer for 3-5 hours. Salt the soup at the very end so it doesn't get too salty as it cooks!
Once done, remove the chicken into a bowl and strain the broth into a separate bowl. Pick the meat off of the chicken set aside.
Serve plain with the chicken meat or add matzah balls!
