You’ve heard of brookies, brownies with cookies or cookie dough on top. Well, I present to you Blookies! I have switched the flavors with the blondie on the bottom and the chocolate cookie on top!
The chewy texture of these blondies is made even better by the butterscotch notes brought by the brown butter. And really, nothing is better than some chewy blondies topped with chocolate cookies!
Cookies
¾ Cup flour
¼ Cup cocoa powder
1 Teaspoon baking soda
1 Teaspoon salt
½ Cup butter, softened (1 stick)
½ Cup brown sugar
¼ Cup granulated sugar
1 Teaspoon vanilla extract
1 Egg
2 Cups mini white chocolate chips
In a large bowl, with a mixer, combine the butter, granulated sugar, brown sugar, and vanilla until combined. Add the egg and mix to combine.
Once the egg is fully combined, add the flour, salt, baking soda, and cocoa powder. Mix until just combined. Stir in mini white chocolate chips with a wooden spoon.
Shape the cookie dough into one inch hearts and place in the freezer while you make the blondie dough.
Blondies
1 ½ Cups brown sugar
½ Cup butter
2 Eggs
1 Teaspoon vanilla extract
1 ½ Cups flour
1 Teaspoon baking powder
1 Teaspoon salt
1 Cup semi sweet chocolate chips
Preheat the oven to 375 degrees.
Melt the butter in a small saucepan over low-medium heat. Let it go until the bubbling noise stops and the butter looks nice and brown. Once it reaches this state, remove from the heat.
In a large bowl, with a mixer, combine the brown sugar and eggs. Pour in the brown butter while the mixer is constantly beating until well combined. Beat in the vanilla.
Beat in the flour, baking powder, and salt until just combined. Stir in the chocolate chips.
Pour the batter into a 9x9 baking pan lined with parchment paper.
Take the heart cookies out of the freezer and press into the batter. Bake for 30-35 minutes or until a toothpick interested into the middle comes out clean.
