I am always partial to a good classic honey cake for Rosh Hashana dessert, but I am the only one in my family who enjoys it… So, I always end up making a honey cake just for myself.
I promise that you will not be the only one to eat this cake when you bring it Rosh Hashana dinner! The dense buttery cake is the perfect ending to a holiday meal! This pound cake is flavored with honey and topped with apples to ring in a sweet new year!
1 Cup (2 Sticks) butter, softened
½ Cup sugar
½ Cup honey
4 Eggs
1 ½ Cups all purpose flour
½ Cup sour cream
1 Teaspoon salt
½ Teaspoon baking powder
1 ½ Teaspoons cinnamon
1 Teaspoon lemon zest
1 Apple sliced thin
Preheat oven to 350 Fahrenheit.
In a large mixing bowl, cream the butter with a hand mixer on medium-high speed. Add in sugar and honey. Mix until light and fluffy.
Add the eggs in one at a time while mixing at medium speed.
Add the sour cream, cinnamon, and lemon zest. Mix until incorporated.
Add the flour and baking powder and mix until combined.
Slice the apple thinly and lay across the bottom of the loaf pan.
Pour the batter on top of the apples. Using a spatula, smooth the top.
Bake at 350F for an hour or until the center is set and a skewer comes out clean.
Allow the loaf to cool in the baking pan for 10 minutes before flipping the cake upside down, out of the loaf pan and onto a cooling rack
Let cool completely before enjoying!
