Apples and Honey Cake Roll

As Rosh Hashana approaches, it is time for apple and honey recipes! This cake roll is a honey flavored sponge caked filled with honey buttercream and sliced apples, and decorated with cute apples on the outside!


Cake

6 Eggs, separated

½ Cup sugar

¼ Cup honey

1 Cup flour


Honey Buttercream

½ Cup butter (1 stick)

¼ Cup honey

2 Cups powdered sugar

1 Granny smith apple


Preheat the oven to 375 degrees Fahrenheit.


Separate the eggs. Begin to whip the egg whites. Once they begin to turn foamy, slowly sprinkle in the sugar while continuing to whip the egg whites with the mixer on high.


Whip for 5-7 minutes until medium peaks form. Medium peaks will stand up when the mixer is pulled from the egg whites, but their tops will fold over.


Set the egg whites aside. In a separate bowl, whisk together the egg yolks and honey until they turn a pale yellow.


Take ¼ of the egg whites and fold into the egg yolk mixture. Continue until all of the whites are folded into the yolks.


Sprinkle the flour into the egg mixture ½ cup at a time, folding in completely before adding more.


Once fully mixed, take 1 Cup of the batter and divide evenly between three separate bowls.


Using gel food coloring dye one of the bowls red, one green, and one brown. Put each color of batter into a separate piping bag.


Line a 9x13 in baking sheet with parchment paper. Starting with the red pipe apple shapes onto the parchment paper. Then, using the green, pipe a leaf shape on top of each apple. FInally, use the brown batter to pipe a stem connecting each leaf and the apple.


Place the baking sheet into the freezer for 20 minutes to allow the apples to harden.


After 20 minutes, take the baking tray out of the freezer and spread the rest of the cake batter over the apples. Bake for 11 minutes.


Take out of the oven and place on a hand towel covered in powdered sugar. Roll the cake in the towel and allow to cool completely.


While the cake is cooling make the frosting by whipping the butter and honey. Alternately, add the powdered sugar and milk until a silky smooth frosting forms.


Unroll the cake and spread the frosting over the cake. Thinly slice a green apple and place on top of the frosting. Roll the cake back up and enjoy!
